Bebek Betutu

a very popular dish in Indonesia especially Bali its land of origin.

Main Ingredients:
* 1 whole duck
* 3 cm fresh ginger, grated
* 100 gram cassava leaves (subs with any hard texture leafy veggies)
* 2 cm galangal/blue ginger - pounded
* 5 pcs kaffir lime leaves - thinly sliced
* 2 stalks of lemon grass - pounded white part
* banana leaf for wrapping


Ground/processed spices:
* 15 pcs red chillies
* 5 pcs bird's eye seed chilies (optional)
* 6 pcs candle nuts
* 2 tsp prawn paste - shallow fried
* 1 tbs ground coriander seeds
* 2 cm kencur or indian galangal
* 3 cm fresh turmeric - flame roasted
* salt, sugar, pepper to taste


Cooking Directions:
1.) Marinate whole duck in grated ginger & salt. Leave for 30 mnts
2.) Stir fry processed spices until fragrant. Add lemon grassgalangal, kaffir lime leaves. Cook for another minutes
3.) Take one third of the spices, mix well with cassava leaves.
4.) Stuff cassava leaves into duck, secure with toothpick/string
5.) Rub duck with the rest of spices. Wrap in banana leaves then securewith a string
6.) Steam for one and half hour until tender
7.) Remove from steamer, place in the oven for another 40 mnts in medium 180 degrees
8.) Serve unwrapped on a bed of steam rice
