Egg Benedict

I’ve been trying perfecting my poached egg technique for quite a while, since it looks so damn easy but apparently a bit tricky. Having a lot of previous kitchen experience, my husband shared the secret ~ it’s all about freshness of the eggs, salt and vinegar. That’s all!

Eggs, bacon strips, cherry tomatoes, slices of bread, spinach

1.) Boil some water in a pot, add salt and vinegar. Ensure the pot is deep
2.) Use fresh eggs, break them into the the boiling water slowly
3.) Let them roll in the boiling water for some time. Set aside in cold water
4.) Pan roast bacon strips
5.) Pan roast tomatoes6
6.) Blanche spinach - add salt & pepper to taste
7.) Top with Hollandaise sauce
